Mahimahi is a Coryphaenidae. Corhyphaena hippurus and Corhyphaena equisetis are the primary species. Even though the fish is sometimes called dolphinfish, it is in no way related to the mammal. The most common name used for this fish is the Hawaiian name, Mahimahi.
Primary catch seasons for the two main producing areas are December through February in Central and South America and April through July for boats fishing the Pacific out of Taiwan.
Mahimahi is a warm-water fish with heavy production from the seas around Taiwan to areas around Guam. Fish are also caught off of Ecuador, Peru, Panama and Costa Rica.
Primary product form offered by Union Fish Company is skin on, bloodline in fillets.
Typical size grading is 1-2 lb, 2-3 lb, 3-4 lb 4-5 lb 5-6 lb and 6 lb up fillets.
Frozen Mahimahi fillets are individually sleeved and put into 50 lb cases. The Capaes Ecuador pack is 100% net weight. Taiwan packers typically pack 10-15% short weight product.
Mahimahi is a mild flavored,
firm-meat, reasonably inexpensive fillet. Because of the exotic
tropical nature of the product and because it is relatively well-known,
the fish is very popular as a low priced menu leader.
