The fish is harvested year-round on a sustainable yield quota basis.
Orange Roughy is a fish caught at extreme depths in subarctic waters.
Most often, the fish is frozen at sea.
The primary product form handled is skinless fillets.
Typical sizing is 2-4 oz, 4-6 oz, 6-8 oz and 8-12 oz or 8 oz up.
Fillets are layer packed with plastic interleave in 10 kg cases.
Orange Roughy has
become very popular in the past few years. Early price levels in
the $2.00/lb range have more than doubled rapidly. The fish is
extremely white, mild, and firm. It is an excellent fish to be
featured at white tablecloth restaurants and sells well in retail
grocery stores even at the high prices.
