'TAKAEI' JAPAN SKIPJACK
(AKU) TUNA LOINS

Skipjack Tuna is Katsuwonus pelamis. Its Hawaiian name is Aku.
The company offers skipjack tuna from Japanese freezer boats that return to Japan twice per year. This occurs once in the spring and again between the months of August and October.
The fish live in warm tropical off shore waters in many parts of the world.
The primary product form handled by Union Fish Company is skinless, bloodline-removed loins. Whole round skipjack tuna are available on a special order basis.
The skipjack is one of the smaller tuna species. Although some fish have been landed as large as 50 lbs, the majority of the catch is in the 10 to 15 lb range. Processed frozen loins are typically graded as 450 gram (1 lb) up and normally are 1 to 1.5 lbs.
Takaei skipjack tuna loins are wrapped tightly in a plastic bag and taped. These are packed in a 25 lb styrofoam case.
The majority of the sales for this
product are in Hawaii. The loins are cut into pieces and eaten raw
as Hawaiian Aku poke (salad) or are dried and consumed as a snack item.
Occasionally chefs will sear skipjack as an appetizer.
