WAHOO (ONO) FILLETS

Acanthocybium solandri is the Latin name for wahoo. The fish is also sold under its Hawaiian name, Ono.
The company offers wahoo from Japanese freezer boats that return to Japan twice per year. This occurs once in the spring and again sometime between August and October.
The fish is caught around the world in tropical and subtropical waters. It is common in the Atlantic, Pacific and Indian Oceans.
Although the fish can be processed in other forms, the primary product handled is a skin on fillet. The fish has the belly trimmed (not totally off) and the bloodline is in.
Sizing is 2 lb up per fillet. It is most common that fillets are in the 5-10 lb size range and occasionally fillets are cross cut once to allow them to fit into the carton. Wahoo are landed which weight over 100 lbs.
Wahoo fillets are glazed and packed in a 50 lb even-weight carton.
Wahoo meat color, especially on
Japanese sea frozen, is very white. The fish is popular as an
entrée or can be used for fish sandwiches. When Mahimahi supplies
are limited and/or priced high, some customers will use wahoo as an
alternative. Since Hawaiian Ono (wahoo) is often flown in fresh to
the mainland markets, an opportunity for top quality frozen wahoo
fillets exists when fresh product is not available or simply too
expensive.
