The Latin name for this fish is Acanthocybium solandri

Our Taiwan wahoo are a by-catch of the Taiwanese tuna fleet and mahi fleets.  There are inventories available pretty much year round.  Wahoo are caught in the open ocean in tropical and subtropical waters. 

Our Taiwan Wahoo fillets are processed from live fish and frozen on board the long-line tuna or mahi boats.  Back in the plant, they are cut in the frozen state into skin-on fillets or further processed by having the central blood line removed, which creates a top and bottom loin.  Then the skin is removed to make the skinless blood-line out loins which we import.  Both the skin-on fillets and the skinless blood-line out loins are packed into 50 lb master cartons for export.  The fillets are 3-5 lb and 5 up lb weights and the loins are 2 up lb. 

As opposed to the Japanese packers who cross cut their Wahoo to get them into smaller cartons, the Taiwan packers pack their fish as whole fillets or whole loins into long cartons.

Wahoo are an excellent eating fish.  The Hawaiians call this fish Ono which means delicious.  Our Taiwan Wahoo fillets and loins have a nice light cream / beige meat color and cook up white. 

The skinless blood-line out loins are very popular with the fish taco restaurants as it allows a very easy preparation for their chefs.
