YELLOWFIN TUNA (AHI)

Yellowfin Tuna is Thunnus albacares. Its Hawaiian name is Ahi.
Attempts to land Yellowfin tuna are made on a year-round basis. Weather and general fishing conditions limit availability on occasion.
The fish live in warm tropical off shore waters in many parts of the world. Most often fish caught in the areas of Indonesia, Malaysia, and the Philippines are the primary inventories handled. Most often this fish is frozen at sea and further cut into loins on shore in Singapore.
The primary product form handled by Union Fish Company is skinless, bloodline-removed loins. Various further cut and treated ahi is also sometimes available.
Yellowfin tuna loins are normally graded 3-5 lb size, 5-12 lb size and 12 lb up.
Yellowfin tuna loins are glazed and packed into 50-80 lb catch weight cardboard cartons.
Non-treated Yellowfin tuna is brown
in color and is normally cooked before serving. The change in
color from red to brown is a normal oxidation process that takes place
in untreated fish even when the product is kept under appropriate
freezer conditions. The brown color does not indicate spoilage and the
fish turns an off-white when cooked. Although the company
occasionally has tasteless smoked or Carbon Monoxide treated ahi that
retains its bright red color, it regularly inventories less expensive
Yellowfin tuna loins for steaking and cooking.
