'SEA WAVE' CA ANCHOVIES
The Latin name for the California (Northern) anchovy is Engraulis mordax. Anchoa compressa, the "Deepbody" Anchovy, is another species found on the coast of California.
Anchovies can be landed year-round. Weather and the availability of other highly priced species play a significant role in anchovy fishing. The anchovies school and are netted in very large quantities.
Sea Wave primarily freezes anchovies landed in the Monterey Bay area, which happens to have anchovies with very good flavor. Other packers will process product from the Southern California coast. Anchovies are abundant in other parts of the world.
Sea Wave freezes anchovies whole round in block form and IQF.
Most often the
anchovies will run about 20-25 fish per pound. Fish smaller than
this are not normally taken. Fish of more than 35 count per pound
are not normally landed unless the larger fish are not available.
