FLOUNDER
The species name for these fish is Rhombosolea spp. Our NZ flounder pack is actually a combination of closely related flounder species. Common names for these in NZ are Sand Flounder and Yellowbelly Flounder.
New Zealand flounder are caught year round by trawling and set nets.
These flounder are found throughout New Zealand's coastal waters down to 100 meters.
Our NZ flounder is whole, gutted, and wrapped in a plastic sheet, hand layered and frozen in a 10 kg master carton.

In
the raw state, both upper side and under side fillets are more beige
off-whites in color. The upper side fillets are slightly darker
than the under side fillets. Both upper and under side fillets
cook up white in color. These fish have a very good flavor and
moist delicate texture.
