MILKFISH
The species name for this fish is Chanos chanos.
Taiwan, Indonesian, and Philippine Milkfish are farmed year round. Being an aquaculture fish, harvests can be planned by the farmers. As such, they usually plan to harvest more fish from August through October in order to meet year-end demand and pull their fish from ponds before the coldest months. The fish tend to grow faster in warmer weather.
Milkfish are raised in aquaculture farms worldwide.
Taiwan/Indonesian Milkfish is IQF frozen whole round and then placed in individual retail labeled plastic bags. They are packed 40 lbs per master carton.
The Philippine product is used for the Boned Milkfish. Boned Milkfish are butterflied and have had their guts and backbone removed, with their head and tail still on. These fish are individually vacuum packed in 33 lb cases.
Whole Taiwan/Indo Milkfish is size graded as 600-800 gram and 800-up gram per fish. Boned Philippine Milkfish is graded on a count per case basis, normally in the 25-35 fish per case range. Roughly .9 lb to 1.3 lb per fish.
Milkfish has a very distinct flavor. Milkfish meat has a light cream meat color. It has a firm texture and lots of bones. Millkfish is the "staple" fish of the Philippines, where it is called "bangus". The most common cooking method is to split and fry the fish.
Buyers need to be careful in purchasing this item as it is common for
the packers to add a lot of frozen water to the whole fish in the form
of a heavy glaze-- shorting the end user of edible fish. Always
ask your supplier about the guaranteed net weight on while round
milkfish.
