The species names for wild Alaskan Salmon types are:

   King (Spring, Chinook)  Onchorhynchus tschawytscha

   Silver (Coho)  Onchorhynchus kisutch

   Chum (Keta, Dog)  Onchorhynchus keta

   Sockeye (Red)  Onchorhynchus nerka

   Pink (Humpback)  Onchorhynchus gorbuscha

   The New Zealand farmed King Salmon is also the Onchorhynchus tschawytscha.

The Alaskan fish are mainly caught in the summer months while the farmed New Zealand King Salmon are typically available year round. 

Kings and Silvers are caught over the largest catch area (Alaska, Canada, and as far south as California.  Sockeyes, Chums and Pinks are limited to more northern catch areas. 

Troll caught fish are usually the more expensive fish available.  Net fisheries are the predominant catch for Alaskan product.

Salmon is available in many product forms.  Union Fish normally deals in headed and gutted salmon only.  Steaks, sides and fillets are sometimes available on a special order basis.

Size grades are typically 2-4 lb, 4-6 lb, 6-9 lb and on some species larger sizes.  Kings, the largest species, are often graded differently (4-7 lb 7-11 lb, 11-18 lb and 18 lb up).

The Alaskan salmon is normally packed in 50 lb cardboard cartons while the New Zealand Kings are packed in 25 kg cartons.
