'SANFORD' NEW ZEALAND
SOLE
The species name for this fish is Peltorhamphus novaezeelandiae.
New Zealand Sole is caught year round by trawling.
This species is only found in NZ and although found in all NZ waters, it is most abundant around the South Island- still, it is a small resource.
Our NZ Sole is taken whole, gutted and wrapped in a plastic sheet, hand layered, and frozen in a 10 kg master carton.

In the raw state,
both upper side and under side fillets are more beige off-whites in
color. The upper side fillets are slightly darker than the under
side fillets. Both upper and under side fillets cook up white in
color. This fish has a very good flavor and a moist delicate
texture.
