The species name for this fish is Chrysophrys auratus. These are the only species of Sea Bream / Porgy found in New Zealand.
This fish can be caught year round, but is controlled by quota with most of the landings from October to March/April. It is a summer fishery in the southern hemisphere.
Tai Snapper does not migrate and the quotas are set by assigned fishing areas per quota holder; each area having a volume limit. Sanford Ltd. holds quota areas that produce the best colored Snapper in New Zealand.

Sizing is based on demand from the Japanese market where snapper is highly prized. They are graded as individual counts per 10 kg carton. Although snapper grow to be as large as 5 count per 10 kg carton, the majority of the USA market prefers 15, 16, 17, 18 , 19 and 20 counts per 10 kg sizes.
NZ Snapper is a great eating fish with an excellent flavor. It has white meat and a medium texture. It is suitable for most cooking methods, but is most commonly gutted, scaled and fried in the Latino trade.
