'SANFORD' NEW ZEALAND TREVALLY
The species name for this fish is Caranx georgianus. Trevally are also commonly referred to as Jackfish.
Trevally are caught year round by trawl, purse seine and set nets.
NZ Trevally are found most commonly around the North Island. They are most abundant along the northern side of the island to depths of 80 meters. A similar species is found in Japan.
Sanford Ltd. packs this fish whole round, guts in. The fish are hand laid in the case and frozen as a shatterpack in a printed 10 kg cardboard carton with a poly liner.
Sizing is based on demand from the Japanese market. They are graded as individual counts per 10 kg carton. Although these fish grow as large as 5 count per 10 kg carton, the majority of the USA market prefers 15, 16, 17, 18 , 19 and 20 counts per 10 kg sizes.
In
the raw state, Trevally flesh is pinkish with dark red blood lines.
The flesh cooks to a light cream color. It has a medium to soft
texture and mild flavor.
