The Latin name for this fish is Stizostedion vitreum.
Omstead’s Walleye are caught on Lake Erie in the gill net manner. The season for the Walleye runs from April to December.
All of Omstead’s Walleye fillets are hand cut by employees with an average of over 25 years experience. After the fish are filleted, they are immediately glazed and individually frozen. They are then given a second glaze and are sized within two ounces. The glaze weight is taken into consideration during packing to ensure the thawed product equals at least the case net weight.
Walleye round sizes range from 1-9 lbs. while the fillets range from 2 to 20+ oz. and are graded in 2 oz increments.
The walleye are IQF in an 11 lb bulk case. They are skin on/scaled.
Fillets smaller than 12 oz are
typically used in family and seafood restaurants while the larger sizes
are more often used for the retail trade. The Walleye flesh is
lean and snowy white with a fine flaky texture and a sweet taste.
It is a versatile fish that can be utilized in many types of recipes
involving frying, baking, grilling, or broiling.
