'OMSTEAD' CANADA WHITE
BASS

The species name for this fish is Morone chrysops. It is a freshwater member of the sea bass family, Moronidae. It is a native species in Lake Erie.
Our fresh water White Bass are fished primarily in Spring and Fall when the lake water is cooler and the fish school together. During the summer months the fishermen will target other more expensive fish species until quotas are full. White Bass are plentiful and are not regulated by a quota.
Although found in most of the Great Lakes, our Canadian fresh water White Bass come exclusively from Lake Erie, which has the largest commercial fishery.
Our White Bass are IQF frozen whole round and packed 40 lbs per polylined master carton.
They are size graded as small, medium and large. Small are under 3/4 lb size, medium are 3/4 - 1 lb and large are 1-2 lb size. Our west coast markets prefer the large fish. Large white bass average about 11 inches in length.
Our White Bass have a slightly sweet, mild flavor. They have a
white meat color. It is a
popular food fish in the Great Lakes area and has been gaining wider
acceptance in West Coast markets due to it's mild flavor and exceptional
value.
