In China, peak production season is from October to the middle of February. Normally fishing is closed from mid June to mid September.
Chinese production comes from the area around Shanghai. Baby octopus is caught in other areas as well, including Vietnam and Thailand.
Baby flower octopus is cleaned, beak out, eyes off. They are packaged raw in 2 lb blocks, 12/2 lb blocks per master case. Although there are various sizes available, Union Fish Company primarily imports only two sizes, 16-25 count/kg and 26-40 count/kg.
Blocks are packed into clear plastic trays and sealed in heavy plastic printed retail bags.
Raw baby flower octopus cooks up white/grey. They can be used in
stir fry or further flavored and consumed in baby octopus salads such as
Chuuka Iidako (bay cooked octopus in Chinese sauce). Raw baby
flower octopus is normally light grey, sometimes with a natural slightly
pink tint.
