'DELTA' CUT MADAKO

The raw material used to produce Delta cut madako is an Octopus vulgaris species.
The product is caught in the East China Sea off the coast of the Fuchien and Chekiang provinces.
The peak production seasons are September through November and March through May.
The peak demand period coincides with the year end holidays both in Japan and the United States and during the period of Lent.
Eyes, beak and guts are removed, the product is cooked and cut into various bite-sized pieces. Both leg and head meat are used in the cut product. The natural ratio of head meat is not more than 20% of total weight.
Sizing is done on a piece count per kilogram basis. Typical sizes handled are 200-250 ct/kg, 300-400 ct/kg, 450-500 ct/kg, 500-700 ct/kg and 700-1,000 ct/kg.
The cut madako is pillow packed in a printed plastic retail bag, 2 lb per bag. 15 bags are boxed in a white pre-printed cardboard master case.
The product is excellent for octopus
salad, pulpo cocktail, and tako poke.
