'POLAR' CANADIAN COOKED HEAD-ON SHRIMP

Pandallus borealis is the species used for cooked Canadian shrimp.
Catch of this shrimp is best during the summer months. The shrimp are processed aboard freezer boats that stay in the fishery grounds for weeks and sometimes months at a time. Demand for this product from other parts of the world such as Japan is strong and often entire processing boat loads are sold for export before they ever return to eastern Canada.
The product is cooked whole, head on, guts in and frozen IQF.
Sizing typically will run 70-90 ct/kg, 90-120 ct/kg and 120 ct and up/kg. The most common size in the U.S. market is the 90-120 count.
Head on shrimp is packed in an 11 lb (5 kg) carton with a poly liner in a printed carton.
Cooked head on shrimp will sometimes contain roe. This is desirable to some customers. Occasionally the heads of the shrimp will darken. This may be a result of the season of the catch, food the shrimp were consuming, or by age. It is a good idea to turn this inventory over quickly.
