LOUISIANA DRIED SHRIMP

Louisiana dried shrimp is processed from both gulf white and gulf brown shrimp (Penaeus setiferus and Penaeus aztecus).
Key production is during August and September but significant landings are made in other months as well. The fishery draws upon both off-shore (Gulf of Mexico) and in-shore (Louisiana Bayou) production. Fishing is closely watched and heavily regulated by government biologists.
The most common form of dried shrimp is headless shell off cooked and dried. The packer also offers a whole dried shrimp as well on a special order basis. Dried shrimp shell material is occasionally available and is ground into powder for use in soups and other prepared foods.

A preprinted 50 lb master carton with a poly liner is the common pack style. They are sized graded as:

Louisiana dried shrimp has a bright orange color and a strong flavor and
aroma. Smaller sizes are used in soups and prepared Chinese
dishes. Larger sizes are an excellent snack with beer.
