CANADIAN DRIED SALT COD


Salt Cod is the company’s original product.  Company schooners and dories fished Alaskan waters from the mid 1860s through the 1930s for cod, carried it back to San Francisco, cured and dried the product and shipped it to various locations throughout the world.

Since the 40’s Union Fish Company has sourced salt cod from eastern Canada. Under brands such as Anchor, White Seal, Pearl and Unicod, salt cod was made available to ethnic customers who continue to freshen and cook the cod with old world recipes.

True Cod from both the Atlantic and Pacific are used for salt cod in the marketplace today.   Atlantic Cod is Gadus morhua or Gadus callarias.  Pacific Cod is Gadus macrocephalus.

Two predominant product forms still exist.  Middles are backbone removed skinless center cuts from the prime portion of the fish.   The other is the headed and gutted, skin on, tail on, collar removed, backbone (mostly removed) butterflied fish.  Moisture is approximately 56% and set by government standards.

Wood boxes are still used for these products.  A 40 lb master on middles and 50 lb on h&g split.

The fish are considered heavily salted and semi-dry.  The product must be soaked in water (typically overnight) to freshen it (remove salt) before cooking.
