'DELTA' CHINA LOLIGO SQUID TUBES & TENTACLES

The species is a Loligo variety similar to the Loligo opalesens popular on the west coast of the U.S.
Fishing is closed June and July. Good production is normally available August-September and April-May.
Chinese production occurs along the southeast coast from Hong Kong to the Taiwan Straits.
Delta packs most of their squid as tube and tentacle pack. The tubes which are roughly 65-70% and tentacles 30-35% (natural proportions) are packed at opposite ends of the block. Straight tube packs are also sometimes available on a special order basis. The beak, eyes, pen and guts have been removed. The skin on the tube has been removed. The wings are left on the tubes.
Sizing is based on tube length. The common size gradings are 3-5 inch and 5-8 inch. Delta is very careful to make sure tubes are graded within the proper size range. It is extremely common in other Chinese brands for tubes to be smaller than the size grading.
The T&T is block frozen in a 2.5 lb block, put into a clear plastic tray and then put into a sealed printed retail plastic bag. There are 20 packages per preprinted white master carton (50 lb master). Each individual bag also has UPC labels, nutritional facts, and recipes.
Loligo is very delicate and has an excellent flavor. The product is often used in stir-fry or breaded and deep fat fried. It is often used marinated as an appetizer or as a topping on a salad.
Delta Squid packs are 100% true weight and have accurate sizing.
Tubes and tentacles are natural proportions. Only fresh top
quality raw materials are used and no chemicals are used in processing.
