Marine Foods uses Short-finned Squid, Illex coindeti Ver to make Ika Kimchee.
Squid is cooked and sliced into thin bite sized pieces. Various flavorings such as salts and peppers highlight the red colored Kimchee sauce.
Ika Kimchee is packed in 2.2 lb pouches and put inside individual printed cardboard cartons. The six cartons are then strapped together with plastic strapping for the 6/2.2 lb master bundle.
Ika Kimchee can be used
on a salad bar or seafood buffet. It is used as an appetizer and
bar snack. The squid is tender. By typical Korean Kimchee
standards this sauce is a bit on the mild side.
